It's been rainy and cold lately, so I spent the week making lasagna. A better cook could probably do this faster, but I enjoy taking my time when I make food for my friends.

    Che bello Alvin! 100-hrs and you used a bottle-tomato sauce! Onions carrots and the rest, couple of bunches of perfectly ripe vine cherry tomatoes blitzed in a blitzer, some basil and it's done. You also forgot anchovies. Come that would only make it 100hrs and 10 minutes lol. That fresh tomato lifts the whole thing with its tangy umami acidity which is completely lost in bottles and cans.

    Since internet is taking over and it is so nice and easy to look up new recipes and different ideas from people all over the world to cook I tried more and more to be a hobby chef myself. I always wanted to create things I couldnt buy where i live (Germany) or tried to make nice fast food and street food by myself. Then there were those "authentic recipes" I#ve tried a lot - but i have to admit that Peccorino isnt just my favorutie flavour. I mean, i really love the authentic, old feeling about it. How it ever was made before (im speaking about the cheese itself) but i really didnt like the animal flavour itself. The next times I cook "italian" i stay with cow milk and not withe goar or sheep. But every tongue has its own place XD
